How does it work?

The shared tasting menu is designed to offer:

  • Shared tasting  the first main courses are served in a way that allows them to be shared and explored together.
  • Individual finishing  after the shared part, you may choose how you would like to “finish” the dish according to your taste — subtle seasoning, changes in texture, or small adjustments based on your personal preferences.
  • Flexibility  the concept works for both lunch and dinner services and is designed to respect traditional elements of Czech cuisine while embracing modern gastronomic trends.

Which dishes can be shared?

Skrei Cod, Orzo Risotto, Cauliflower, Dried Olives, Buttermilk Emulsion

A light and creamy yet well-structured dish with the delicate flavor of Nordic cod.

Shared accompaniments are served at the table — herb-marinated cherry tomatoes, sautéed wild broccoli, a warm Jerusalem artichoke and lentil salad with fried capers, and a delicate cauliflower purée. Guests can adjust the plate to their liking — fresher, creamier, or more intense.

Lamb Loin, Potato Fondant, Eggplant and Mint, Seasonal Ragout, Lamb Jus

A rich and aromatic dish with tender lamb and deep, flavorful jus. A course inspired by modern Czech cuisine.

For sharing, we serve silky eggplant purée with mint, roasted carrots, seasonal vegetable ragout, and sautéed Brussels sprouts with Doupov bacon. Guests can combine flavors to create their own balance — more delicate, more rustic, or more intensely meaty.
