Aleš Pátek and his team stand behind the concept of the shared tasting menu. He draws inspiration from contemporary global culinary trends, where fine dining is not only about technique, but also about interaction and a shared experience at the table.
His approach combines precise craftsmanship, respect for Czech ingredients, and openness to new styles of presentation. The shared menu is therefore not just an innovation, but a natural evolution of the cuisine.
How does it work?
The shared tasting menu is designed to offer:
- Shared tasting – the first main courses are served in a way that allows them to be shared and explored together.
- Individual finishing – after the shared part, you may choose how you would like to “finish” the dish according to your taste — subtle seasoning, changes in texture, or small adjustments based on your personal preferences.
- Flexibility – the concept works for both lunch and dinner services and is designed to respect traditional elements of Czech cuisine while embracing modern gastronomic trends.
Which dishes can be shared?
Turbot fillet, roasted asparagus, carnaroli risotto with citrus, fennel, yuzu foam
An elegant and refreshing gluten-free option combining the delicate flavour of brill with creamy citrus risotto and the lightness of yuzu foam.
Shared side dishes are served at the table – sautéed green asparagus and marinated fennel with citrus notes. Guests can adjust the dish to their own taste – fresher, bolder or creamier.
Additional seasonal accompaniments inspired by the kitchen’s current selection are also served, changing regularly to bring a unique touch to every dining experience.

A rich and honest dish featuring perfectly aged pork chop, a full-bodied beer sauce and a modern interpretation of traditional ingredients.
Shared side dishes are served at the table – roasted buttered cabbage and braised cabbage ragout with chickpeas and garlic confit. You can create the final flavour profile to your liking – more rustic, bolder or more delicate.
The dish is further complemented by seasonal sides and variations reflecting the kitchen’s current offerings, evolving over time to highlight freshness and variety.
